These super simple keto peanut butter cookies deliver classic peanut butter cookie flavor with minimal ingredients and very little prep work. Natural peanut butter creates a rich texture while stevia keeps the recipe low in sugar and relatively low in net carbs. The cookies are beginner friendly, budget friendly, easy to customize, and work well as a quick dessert or snack for peanut butter lovers.
Ingredients
- 16 oz natural peanut butter
- 1.5 Tbsp stevia extract powder
- 2 eggs
- 2 tsp vanilla extract
- Water for dipping the fork
Instructions
- Preheat oven to 350°F.
- Line a baking sheet with parchment paper or lightly grease the pan.
- In a large mixing bowl, stir together the peanut butter, stevia extract powder, and vanilla extract.
- Taste the dough before adding eggs and adjust sweetness if desired.
- Make a well in the center of the mixture.
- Crack the eggs into the well and whisk lightly with a fork until combined.
- Stir the eggs into the peanut butter mixture until a thick cookie dough forms.
- Roll the dough into roughly 1-inch balls and place them on the prepared baking sheet.
- Dip a dinner fork into water and gently press each cookie.
- Rotate the fork 90 degrees and press again to create a crisscross pattern.
- Smooth any cracked edges with your fingers if desired.
- Bake for about 12 minutes.
- Allow cookies to cool for at least 5 minutes before eating since the centers will be very hot initially.
