These super simple keto peanut butter cookies deliver classic peanut butter cookie flavor with minimal ingredients and very little prep work. Natural peanut butter creates a rich texture while stevia keeps the recipe low in sugar and relatively low in net carbs. Ingredients

  • 16 oz natural peanut butter
  • 1.5 Tbsp stevia extract powder
  • 2 eggs
  • 2 tsp vanilla extract
  • Water for dipping the fork

Instructions

  1. Preheat oven to 350°F.
  2. Line a baking sheet with parchment paper or lightly grease the pan.
  3. In a large mixing bowl, stir together the peanut butter, stevia extract powder, and vanilla extract.
  4. Taste the dough before adding eggs and adjust sweetness if desired.
  5. Make a well in the center of the mixture.
  6. Crack the eggs into the well and whisk lightly with a fork until combined.
  7. Stir the eggs into the peanut butter mixture until a thick cookie dough forms.
  8. Roll the dough into roughly 1-inch balls and place them on the prepared baking sheet.
  9. Dip a dinner fork into water and gently press each cookie.
  10. Rotate the fork 90 degrees and press again to create a crisscross pattern.
  11. Smooth any cracked edges with your fingers if desired.
  12. Bake for about 12 minutes.
  13. Allow cookies to cool for at least 5 minutes before eating since the centers will be very hot initially.
