These keto “Snickers” ice cream bites combine creamy vanilla ice cream, gooey caramel sauce, crunchy peanuts, and rich chocolate into an easy frozen dessert inspired by a classic candy bar. Using store-bought keto ingredients keeps preparation extremely simple while still delivering sweet-and-salty flavor and satisfying texture. Refreezing the bites after assembling also makes them convenient for grab-and-go snacks, party desserts, or anytime cravings without baking.
Ingredients
- 2 keto vanilla ice cream bars or about 1.5 cups keto vanilla ice cream
- 1/4 cup keto caramel sauce
- 1/3 cup roasted salted peanuts, chopped
- 1/3 cup sugar free chocolate chips
- 1 tsp coconut oil or butter
Instructions
- Line a small plate or tray with parchment paper.
- If using keto ice cream bars, cut them into bite-sized chunks.
- If using scooped ice cream, scoop small rounded portions onto the parchment-lined tray.
- Place the ice cream pieces into the freezer for about 10 minutes to firm up slightly.
- Drizzle the caramel sauce generously over the ice cream bites.
- Sprinkle chopped peanuts over the tops.
- Place the chocolate chips and coconut oil into a microwave-safe bowl.
- Microwave in short intervals, stirring until smooth and melted.
- Drizzle the melted chocolate over the bites.
- Return the tray to the freezer for at least 20 to 30 minutes until firm.
- Serve directly from the freezer.
Notes
- Rebel, Nick’s, and Halo Top are some keto ice cream options that work well.
- ChocZero caramel sauce is one convenient lower-carb topping option.
- Coconut oil helps thin the chocolate for easier drizzling.
- Keeping the bites frozen helps maintain texture and prevents melting.
- Roasted salted peanuts provide the classic sweet-and-salty candy bar flavor.
