Ingredients

  • 12 oz precooked chicken strips
  • 12 oz frozen pepper and onion blend
  • 8 keto tortillas, taco size
  • 1 oz packet taco seasoning
  • 2 Tbsp olive oil

  • 1 cup shredded Mexican cheese blend
  • 3/4 cup sour cream
  • Hot sauce
  • Keto barbecue sauce
  • Sliced avocado
  • Shredded lettuce

Instructions

  1. Heat a skillet over medium heat.
  2. Add the olive oil and frozen pepper and onion blend.
  3. Sauté for about 5 minutes, stirring occasionally, until vegetables become tender.
  4. If the chicken is frozen, microwave for about 2 minutes to thaw.
  5. Add the chicken and taco seasoning to the skillet.
  6. Cook for another 3 to 5 minutes until heated through.
  7. Transfer the chicken and vegetable mixture to a heat-safe serving bowl.
  8. Optional: Add additional olive oil to the skillet if needed.
  9. Warm the keto tortillas for about 30 seconds per side.
  10. Wrap warmed tortillas in a clean towel or paper towel to keep warm.
  11. Serve with desired toppings.

  • Precooked shredded beef or carnitas can be substituted for the chicken.
  • Fresh chicken breast can also be cooked and sliced for this recipe.
