Ingredients

  • 1 bag avocado ranch salad kit
  • 8 oz precooked chicken strips
  • 2 low carb or keto taco-size tortillas (such as Mission Carb Balance Soft Taco Flour Tortillas)
  • 2/3 cup shredded Mexican blend or cheddar cheese
  • 2 tsp butter

Instructions

  1. Open the salad kit and discard any high carb toppings such as tortilla strips if included.
  2. Toss the salad greens with the avocado ranch dressing in a large bowl.
  3. Divide the salad evenly between two serving plates.
  4. Warm the precooked chicken strips in the microwave or a skillet for 1 to 2 minutes.
  5. Place about 4 oz of chicken on top of each salad.
  6. Assemble both quesadillas before cooking by sprinkling 1/3 cup cheese over one half of each keto tortilla and folding them closed.
  7. Heat a large skillet over medium heat and melt the butter.
  8. Place both folded quesadillas into the skillet and cook for about 2 minutes until golden brown underneath.
