Ingredients
- 1 bag avocado ranch salad kit
- 8 oz precooked chicken strips

- 2/3 cup shredded Mexican blend or cheddar cheese
- 2 tsp butter
Instructions
- Open the salad kit and discard any high carb toppings such as tortilla strips if included.
- Toss the salad greens with the avocado ranch dressing in a large bowl.
- Divide the salad evenly between two serving plates.
- Warm the precooked chicken strips in the microwave or a skillet for 1 to 2 minutes.
- Place about 4 oz of chicken on top of each salad.
- Assemble both quesadillas before cooking by sprinkling 1/3 cup cheese over one half of each keto tortilla and folding them closed.
