This lazy keto chicken teriyaki stir-fry delivers sweet-and-savory takeout-style flavor with minimal prep work and fast cleanup. Using precooked chicken, ready-to-use vegetables, cauliflower rice, and low carb teriyaki sauce helps create a satisfying keto dinner in about 10 minutes without chopping raw meat or making homemade sauces. The combination of protein, healthy fats, and flavorful sauce also makes this recipe filling while keeping net carbs relatively low.

Ingredients

  • 10 oz precooked grilled chicken breast strips
  • 12 oz stir-fry vegetable blend without sauce
  • 1.5 Tbsp avocado oil or refined coconut oil
  • 1/2 tsp garlic powder
  • 4 Tbsp low carb teriyaki sauce, divided
  • 2 cups plain riced cauliflower

Optional Garnishes

  • Toasted sesame seeds
  • Thinly sliced green onions
  • Sriracha sauce
  • Chopped almonds or peanuts

Instructions

  1. Heat a large skillet or wok over medium-high heat.
  2. Add the avocado oil and allow it to heat until shimmering.
  3. Add the stir-fry vegetables in an even layer.
  4. Cook undisturbed for about 2 minutes to develop light browning.
  5. Stir and continue cooking another 2 to 3 minutes until vegetables become tender-crisp.
  6. Sprinkle in the garlic powder and stir briefly.
  7. Lower the heat to medium.
  8. Add the precooked chicken strips to the skillet.
  9. Pour in 2 tablespoons of the teriyaki sauce.
  10. Stir-fry for about 2 minutes until the chicken is fully heated and coated with sauce.
  11. Meanwhile, heat the cauliflower rice in the microwave or a separate skillet until tender.
  12. Divide the cauliflower rice evenly between two serving bowls.
  13. Top with the chicken and vegetable stir-fry mixture.
  14. Drizzle the remaining teriyaki sauce over the bowls just before serving.
  15. Garnish with sesame seeds or green onions if desired.

Notes

  • Different low carb teriyaki sauces may vary significantly in sweetness and net carbs.
  • Frozen cauliflower rice works well if thawed or microwaved before serving.
  • Stir-fry vegetable blends containing carrots may slightly increase carbs.
  • Refined coconut oil works well for higher-heat cooking because of its neutral flavor.
  • Kevin’s Natural Foods Soy-Free Teriyaki Sauce is one convenient lower-carb option.
