Ingredients

  • 2 bunches curly kale, washed, de-stemmed, and completely dried
  • 1/2 cup macadamia nut butter or sunflower seed butter
  • 1/3 cup nutritional yeast
  • 2 Tbsp warm water, plus more if needed
  • 1 Tbsp lemon juice
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1 tsp sea salt

Instructions

  1. Preheat the oven to 250°F (120°C).
  2. Tear the fully dried kale leaves into large bite-sized pieces and place them into a large mixing bowl.
  3. In a separate medium bowl, whisk together the macadamia nut butter or sunflower seed butter, nutritional yeast, warm water, lemon juice, and all spices until smooth.
  4. If needed, add additional warm water one teaspoon at a time until the mixture becomes thick but pourable.
  5. Pour the sauce mixture over the kale.
  6. Use your hands to massage the coating thoroughly into all the folds of the kale leaves.
  7. Spread the coated kale in a single layer on parchment-lined baking sheets.
  8. Bake for 35 to 45 minutes, flipping halfway through, until completely crisp.
  9. Let cool for about 5 minutes before serving.

Notes

  • Completely drying the kale before coating is important for crisp texture.
  • Homemade macadamia or sunflower seed butter can be made by blending the nuts or seeds in a food processor until smooth.
  • As a shortcut, replace the last six ingredients (spices & salt) with ready-made taco seasoning.
  • Sunflower seed butter works well for a nut-free version.
  • If using salted nut or seed butter, reduce the added salt slightly.
